Their research has found that every year we throw away an estimated 2 million turkeys, 74 million mince pies and 5 million Christmas puddings. And with a Christmas food bill averaging £169 per household that’s a lots of food and money wasted!

I’ve never been a leftover kind of person, but this year I’m on a mission to change. (1) To save money (2) to save waste and (3) because I am sure there is more you can do to leftovers besides warm them up in the mircowave. So I am loving the tips from Love Food Hate Waste who suggest:

1. Cooked meat like turkey and ham can be frozen (as long as it wasn’t frozen to begin with) so if on Boxing Day you have lots left over, pop it in the freezer and then thaw it in the fridge when you fancy making a casserole, curry, stew or ham, turkey and leek pie.

2. Sick of Christmas pudding? Try turning it into a tasty strudel.

3. Loads of sprouts and roasties leftover? Use them with leftover roast or boiled potatoes to make bubble and squeak. Simply chop or fry together in a pan with some butter.

5. Use up satsumas with this quick pudding. Peel and place the whole fruits in an oven proof dish, sprinkle with a little ground cinnamon, spoon over a tablespoon of Cointreau or whisky and sprinkle with soft brown sugar. Cover and bake in the oven at 180°C (350°F) mark 4 for 40 minutes serve with cream, yoghurt or ice cream.

Tips from friends include stir frying the left over turkey the next day with vegetables and noodles, not buying mince pies (does anyone really love them?) and definitely making bubble and squeak for breakfast. I also love the idea of making left over Christmas pudding into a festive trifle (see picture above), which even the kids, who hate Christmas pud love to eat.

So what about you? What treats do you serve up with leftovers? Let us know.

Ever on a bid to save money and not waste food I love the new tips list and research from Love Food Hate Waste and Unilever.
